the nights are super long these days so any chance of me taking a good photo of my dinner to share is slim to none. and lately, i find that my lunches are more creative being that i am working with limited quantities of abundant ingredients. limited in the size of last nights dinner leftovers (gotta share the wealth with mase..) and abundant in the fact that i have lots of little bits in my pantry and fridge (i dislike throwing away food.) so usually what i’ve got time for is a quick five to ten minute prep of at least 3-5 ingredients. tossed in a pot or what not to warm up and voila, lunch!
yesterdays lunch mashup was a mix of spiced pumpkin soup and honey sriracha chicken wings. i should have added a bit of greens to this to round out the bowl but i left my groceries in the car because niyya and i were famished!!
the recipe for the wings was a combination of roasting them and coating them with this sauce. i nixed the cayenne and thyme in the first recipe because i wanted the flavours of the sriracha sauce to stand on their own. oh and we added in a teaspoon of honey to cut the spice factor just a bit for the kids.
